Copper Complexes of Chlorophyll

A green plant-pigment derivative; halal.

Why?

E141 is produced by treating chlorophyll, the green pigment extracted from plants such as nettles, grasses, or alfalfa, with a copper salt to stabilize its color. It remains entirely plant-derived.
