Mineral curing salts used in processed meat; halal as a compound, but often used in pork products.
Why?
Sodium nitrite and related nitrate/nitrite salts are mineral-derived curing agents used to preserve color and prevent botulism in cured and processed meats like sausages, bacon, and deli meat. The compound itself is halal, but it is very frequently used in pork-based products — so the surrounding meat, not the nitrite, is usually the actual concern.
