Esters of Mono- and Diglycerides
Also known as: E472
A family of emulsifiers built on E471, with the same animal-or-plant sourcing ambiguity.
Why?
The E472 series (472a through 472f) are further esterified versions of the mono- and diglycerides found in E471, combined with acids like citric, lactic, or tartaric acid. They carry the same underlying sourcing question as E471: the fatty acid backbone may originate from animal fat or vegetable oil.
Good to know
Treated as mushbooh by default, same as E471, unless the product specifies a plant source.
