E481
Also known as: Sodium Stearoyl Lactylate
A stearic-acid-based dough conditioner; halal unless the stearic acid is animal-fat derived from a non-halal source.
Why?
E481 is an emulsifier and dough strengthener derived from stearic acid, which can be sourced from either vegetable oils or animal fats. As with E471, when plant-derived it is halal; when animal-derived, its status depends on the source animal and slaughter method, and this is rarely disclosed on packaging.
Good to know
Common in breads and baked goods.
